Ragi Dosa


This recipe is to quick, tasty, healthy ragi dosa.

Ingredients
  • 1 cup ragi flour / finger millet flour
  • 1/2 cup whole wheat flour / atta
  • 1 teaspoon Cumin seeds  (optional)
  • 1 teaspoon salt
  • 3 cups curd (spare curd)
  • 1 teaspoon grounded pepper (optional)
  • 5 teaspoon oil
  • 1 teaspoon ground green chilli (optional)

Method
  1. In a bowl, mix the flours, salt, cumin seeds and the curd.
  2. Mix the flour and curd till there are no lumps and it is for batter consistency. Add the spare curd if needed to make the batter.
  3. Apply oil on the tava and heat it.
  4. Take the batter in a ladle and spread it on the tava. Donot make it too thin.
  5. Sprinkle some oil on the top.
  6. Once the dosa is cooked, flip it over and cook on the other side.
  7. Serve it hot with chutney or sauce or jam.

Why is this recipe for the lazy? 

No pre planning is needed, like soaking the dal and grinding it. You can just think of dosa and make it.

Whole wheat eggless cake / atta cake


This recipe is to make whole wheat eggless cake.

Ingredients
  • 1 cup whole wheat flour / atta
  • 3/4 cup sugar (If you want more sweet in the cake you can increase it to 1.5 cups)
  • 1 cup curd
  • 3/4 cup vegetable oil
  • 1 Cinnamon powder
  • 1 tbsp rasins (optional)
  • 1 tbsp cashews (optional)
  • 1 tbsp cherries (optional)
  • 1 tbsp baking powder
  • 1.5 tbsp cooking soda

Method
  1. In a bowl, mix the flour and the soft butter.
  2. Mix all the dry ingredients (flour, sugar, cinnamon powder, baking powder, soda) in a large bowl.
  3. Blend the curd and vegetable oil in another bowl
  4. Mix the dry and wet ingredients together and blend together well
  5. The dough must drop off from the ladle easily, if not add water and blend well
  6. Grease the cake dish and pour the dough into it.
  7. Preheat the oven to 200 degrees 
  8. Bake the cake at 170 degrees for about 30 minutes. 
  9. Keep testing at intervals with a tooth pick, to check if the cake is done. 
  10. Once the cake is done, the toothpick comes out clean.
  11. Cut and serve once the cake cools

                      Why is this recipe for the lazy? 

                      It takes about 5 minutes to mix all the ingredients and all the hard work is done by the oven. :-)

                      I use IFB mircowave. In this oven the cookies don't bake evenly, so I keep turning the cake plate once in ten minutes.

                      Whole wheat cookies


                      This recipe is to make salted whole wheat cookies. 

                      Ingredients
                      • 1 cup whole wheat flour / atta
                      • 1/2 cup salted butter (Have about 2 teaspoons butter to spare)
                      • 1 teaspoon Cumin seeds  (optional)
                      • 1 teaspoon Om / Ajwain seeds (optional)
                      • 1 teaspoon grounded pepper (optional)

                      Method
                      1. In a bowl, mix the flour and the soft butter.
                      2. Make a dough of the flour and butter, knead it well and add the spare butter if needed. To make soft cookies avoid adding milk or water
                      3. Grease your palms lightly.
                      4. Make small balls of the dough and press them between your hands. 
                      5. Place the cookies on the greased cookie plate at about 1/2 inch distance.
                      6. Pre heat the oven in convection mode to 160 degree F.
                      7. Bake the cookies for about 10 minutes or until cookies are lightly gold brown.
                      8. Let the cookies cool down for two to three minutes and take them off the cookie plate.

                      Why is this recipe for the lazy? 

                      All you need is whole wheat flour and soft salted butter.

                      As my blog title suggests, my recipes are for those who don't want to push oneself to create exotic dishes but still be able to make tasty and lip smacking stuff with little effort (For people like me :-) ) or for those people who have little time on their hands but still want to satiate tongues.
