Kulfi

thick Milk - 2 lt
sugar - 1/2 cup
cardmom
dry fruits / mango pulp

Boil milk to 1/3. Add sugar and cardmom and boil.
Freeze it.

100 ml Milk 1 1/2 Tbsp Corn flour 1/2 ltr Milk ( 500 ml) 1/2 Cup Jaggery 1 Cup Mango

mix corn flour and milk.
Boil 1/2 lt milk. Add corn flour mix. boil till it get thick. Add mango pulp and grind.
Freee for 4 hours, then grind again and freeze again.

Mango Chutney

Grated Totapuri (should be a bit ripe)
Salt 1/3 grated totapuri
Jaggery 1/3  grated totapuri
Chilli powder 1/3 grated totapuri
5 spoons oil
Garlic cloves (optional)

In a thick Kadai, put oil, mustard and hing.
Put the grated mango and saute it till tender.
Add salt, jaggery and chilli powder and continue sauting it, till all the spices are absorbed.

Cornflour halwa

Corn flour - 1 cup
Water - 3 cup
Milk - 1 cup
Sugar - 1 cup
Ghee - 3 tsp
Raisins and cashews

Roast cashews and raisins in ghee in a Kasai.
Put all the remaining contents into Kasai.
Gently keep stirring on low flame till it gets thick and starts leaving the sides.
Pour the content into a ghee greased plate.
Cut the halwa into pieces once it is cool.

Gooseberry pickle

250gms gooseberry
2tsps uraddal and til each
1tsp methi and mustard powder
3tsps chilli powder
Salt per taste
Jaggery per taste

Boil gooseberry in water that is just above that.
Take out cooked gooseberry and de-seed them.
Dry fry urad and til till brown. Grind them with water of gooseberry along with methi, mustard powder, chilli powder.
Put the grinded mixture, gooseberry into the boiled water.
Add salt and jaggery and let the mixture boil.
Top it with seasoning.

Breadizza

Ingredients
Bread (I use whole wheat bread)
1 Capsicum chopped finely
1 Onion chopped finely
1 Tomato chopped finely
Mozarella cheese (shredded) / Amul cheese slices cut into small
Tomato ketchup (chili tomato)
1/2 tspn Salt
1/2 tspn Pepper
1/2 tspn Oregano

Method

Mix salt, pepper and all the vegetables in a microwavable bowl, and microwave for 1 minute.
Apply the tomato ketchup evenly on the bread slices.
Spread the vegetables evenly on the bread slices.
Sprinkle the cheese pieces.
Microwave the bread for about 1 to 1.5 minutes or till cheese melts or convection microwave at 160 for about 3 minutes.
Sprinkle oregano and enjoy the breadizza

Cream of Cauliflower

Ingredients
100 gms Cauliflower cleaned
1 cup Milk (Keep some spare milk)
1 tspn Salt
1/2 tspn Pepper
1/2 tspn Butter
1/2 tspn Cheese (optional)

Method
Put milk and cauliflower into a vessel / cooker and boil.
When cooked, blend in liquidser or mixer.
Heat some butter in a wok, pour the cauliflower mixture into it.
Add salt, pepper and boil for a minute.
Boil in / Garnish it with cheese.
